2.Fractions 分数 通常将分子读为基数,将分母读为序数。
1/2 = a (or one) half

4.Mathematic Forms 数学式
(1) Addition 加法
1+2=3 One and two are three.
2+3=5 Two plus three equals five.
4+0=4 Four and nought is equal to four.
45+70+152=267 45,70 and 152 added are (or make) 267 the sum (or total) is 267.
演算时的读法:
Three and seven are ten; I write(or I write down,or I put down)a nought and carry one. Four and one that I carry are five, and eight make thirteen,and three sixteen; I write down six and carry one. One and one (that I carry) are two; I put down two.- The sum (or total, or the result of the addition) is two hundred and sixty. 37,80 and 143 added together, and(or make) 260.
(2)Subtraction 减法
9-4=5 Nine minus four equals (or is equal to) five.
15-7=8 Seven from fifteen leaves eight.
23,654-8,175=15,479 8,175 (take or subtracted) from 23,654 leaves 15,479.
The difference (or The remainder) is 15,479. Nine from five won`t go.
演算时的读法:
Nought from nought (leaves) nought. One from one leaves nought (or nothing). Two from three (leaves) one. I can`t take (or subtract) five from four; I must borrow ten; five from fourteen leaves nine.- The difference (or The remainder) is nine thousand one hundred. 5210 (take or substracted) from 14,310 leaves 9,100.
(3)Multiplication 乘法
1×0=0 One multiplied by nought equals nought.
1×1=1 Once one is one.
2×1=2 Twice one is two.
3×5=15 Three times five is fifteen
6×0=0 Multiply six by nothing, and the result is nothing.
演算时的读法: Five times nine (or Nine multiplied by five) are forty-five; I put down five and carry four. Five times seven are thirty-five and four (that I carry) are thirty-nine; I write down nine and carry three. Five times six make thirty and three (that I carry) thirty-three; I put down thirty-three. Eight times nine (or Eight nine) are seven two; I write two and carry seven. Eight sevens make fifty-six and seven are sixty-three. I put down three and carry six. Eight sixes make forty-eight and six fifty-four; I write down fifty-four. I now add the partial results (or products) Five. Two and nine are eleven. Three and three are six and one are seven. Four and three make seven. Five.
(4)Division 除法
9÷3=3 Nine divided by three maks (or is equal to) three.
20÷5=4 Five into twenty goes four times.
4567÷23=198余13 23 into 4567 goes 198 times, and 13 remainder. The quctient is 198, and 13 remainder.
演算时的读法: Fifteen into thirteen won`t go ; fifteen into one hundred and thirty-eight goes nine times; nine times fifteen are one hundred and threty-five; one hundred and thirty-five from one hundred and thirty-eight leaves three; I bring down seven; fifteen into thirty-seven goes twice; twice fifteen are thirty; thirty from thirty-seven leaves seven.   The (exact) quotient is ninety-two, and seven remainder; 15 into 1387 goes 92 times, and 7 remainder.

 “Espresso”这个词出自意大利语“快速”,因为意大利浓咖啡的制作及送到消费者手里的速度都相当快。意大利浓咖啡就像暖蜜似地从过滤器里缓缓滴落,深红棕色的,奶油含量达到10%至30%。意大利浓咖啡的酿造可以用4个M来定义:Macinazione代表一种正确的混合咖啡的研磨方法; Miscela是咖啡混合物; Macchina是制作意大利浓咖啡的机器; Mano代表煮咖啡的师傅的熟练技术手法。只有这四个M中的每一个要素都被精确地掌握,煮出的意大利浓咖啡才是最棒的。    喝意大利浓咖啡时,只需尝一小口我们就会迅速被其浓郁的口味和香气所折服,这正是意大利浓咖啡与其他咖啡的不同之处。香味和浓度是衡量意大利浓咖啡是否好喝的两个尺度。

卡布奇诺咖啡(Cappuccino )  
卡布奇诺咖啡是另一种浓咖啡,含有50%蒸牛奶和50%泡沫牛奶。也可以说含有1/3浓咖啡,1/3蒸牛奶和1/3泡沫牛奶。但是,这也得取决于制作咖啡的人。许多地方会使用更多蒸牛奶和更少泡沫。 这种咖啡,颜色好像意大利修道士戴的头巾,所以定名为卡普奇诺(加奶油块咖啡)。伴有肉桂棒,再淋上柠檬汁,显示出复杂的风味。 所谓干卡布奇诺(Dry Cappuccino)是指奶泡较多,牛奶较少的调理法,喝起来咖啡味浓过奶香,适合重口味者饮用。到于湿卡布奇诺(Wet Cappuccino)则指奶泡较少,牛奶量较多的做法,奶香盖过浓呛的咖啡味,适合口味清淡者。湿卡布奇诺的风味和时下流行的拿铁差不多。一般而言,卡布奇诺的口味比拿铁来得重,如果您是重口味不妨点卡布奇诺或干卡布奇诺,您如果不习惯浓呛的咖啡味,可以点拿铁或湿卡布奇诺。 配制方法:把深煎炒的咖啡预先加热,倒入小咖啡杯里,加2小匙砂糖,再加1大匙奶油浮在上面,淋上柠檬汁或橙汁,用肉桂棒代替小匙插入杯中。

摩卡咖啡(Mocha)  
摩卡是也门的一个港口。也门位于西南亚,在阿拉伯半岛的南角,是主要的咖啡生产国。 目前以也门所生产的咖啡为最佳,其次为依索比亚的摩卡;摩卡咖啡带润滑中之中酸至强酸、甘性特佳、风味独特,含有巧克力的味道;具有贵妇人的气质,是极具特色的一种纯品咖啡。 摩卡咖啡在小巧的杯中显出浓厚的纽约风味,配制方法:在杯中加入巧克力糖浆20毫升和很浓的深煎炒咖啡,搅拌均匀,加入1大匙奶油浮在上面,削一些巧克力末作装饰,最后再添加一些肉桂棒。 瑞士摩卡(威克兰娜咖啡),摩卡加上鲜奶和巧克力糖浆,再加上鲜奶油和巧克力

摩卡薄荷咖啡
摩卡薄荷咖啡:“在冷奶油上倒上温咖啡”冷奶油浮起,成冷甜奶油,它下面的咖啡是热的,不加搅拌让它们保持各自的不同温度,喝起来很有意思。这是美国人爱好的巧克力薄荷味咖啡,薄荷味和咖啡相称地调和酿造出来。 配制方法:在杯中依次加入20克巧克力、深煎炒的咖啡、1小匙白薄荷,再加1大匙奶油浮在上面,削上一些巧克力末,最后装饰一片薄荷叶即成。

蓝山咖啡(Blue Mountain )
 著名的咖啡都用出产地来描述其特征。气候和土质都最终会给咖啡口味带来细微的变化。牙买加的热带岛屿拥有种植咖啡的绝佳条件。岛屿的大部分都被山地覆盖着,包括作为岛屿的最高地带的蓝山山区。蓝山山区是一块富饶的土地,那里炎热的气候、充足的降水和高海拔完美地结合在一起。在海拔将近7500英尺的地方是世界上咖啡出产量最高的地方。 牙买加蓝山地区的咖啡有三个等级:蓝山咖啡(Blue Mountain Coffee),高山咖啡(Jamaica High Mountasin Supreme Coffee Beans)和牙买加咖啡(Jamaica Prime Coffee Beans)。其中的蓝山咖啡和高山咖啡下面又各分两个等级。从质量来分由上到下依次为:蓝山一号,蓝山二号,高山一号,高山二号,牙买加咖啡。通常情况下种植在海拔457米到1524米之间的咖啡才被称之为蓝山咖啡。种植在海拔274米至457米之间的咖啡通常被称为Jamaica Prime Coffee Beans ,在价格上蓝山咖啡要比高山咖啡高出数倍。
咖啡不是牙买加土生土长的。咖啡豆是于1728年被总督带到岛屿上的。蓝山咖啡有着非常纯正的口味,而且带着甜味。它的味道醇厚,顺滑,浓烈,风味细腻的咖啡;纯蓝山咖啡口感、香味较淡,但喝起来却非常香醇精致;具有贵族的品味,乃咖啡中之极品。因其生长的地理区域相当狭小,因此蓝山咖啡的产量也十分有限,有时甚至难以买到。

拿铁咖啡(Latte)
  这是一种含有蒸牛奶的浓咖啡,在一些咖啡店里,咖啡顶部会有少量泡沫。它比卡布奇诺咖啡的泡沫要少一些。 意大利浓缩咖啡加入高浓度的热牛奶与泡沫鲜奶,保留淡淡的咖啡香气与甘味。散发浓郁迷人的鲜奶香,入口滑润而顺畅,是许多女生的最爱 拿铁中的咖啡、牛奶与奶泡的比例是1:8:1,因此,它可以说是一杯没有负担的咖啡,可以喝到牛奶的温润,像是一杯牛奶咖啡,只是喝牛奶时有咖啡香。 如果在热牛奶上再加上一些打成泡沫的冷牛奶,就成了一杯美式拿铁咖啡。星巴克的美式拿铁就是用这种方法制成的:底部是意大利浓缩咖啡,中间是加热到65~75℃的牛奶,最后是一层不超过半厘米的冷的牛奶泡沫。
曼特宁咖啡(Mendeling) 咖啡中的绅士--苏门答腊曼特宁 :曼特宁是生长在海拔750~1500米高原山地的上等咖啡豆,寓意着一种坚韧不拔和拿得起放得下的伟岸精神。它代表着一种阳刚,喝起来有种痛快淋漓、恣意汪洋、驰骋江湖的风光,这种口味让男人们心驰神往。 是苏门答腊中最具代表性的咖啡;气味香醇,酸度适中,甜味丰富十分耐人寻味,适合深度烘培,散发出浓厚的香味。 是印度尼西亚生产的咖啡中品质最好的一种咖啡。

维也纳咖啡(Viennese)
"Viennese"乃奥地利最著名的咖啡,是一个名叫爱因·舒伯纳的马车夫发明的,也许是由于这个原因,今天,人们偶尔也会称维也纳咖啡为“单头马车”。 以浓浓的鲜奶油和巧克力的甜美风味迷倒全球人士。雪白的鲜奶油上,洒落五色缤纷七彩米,扮相非常漂亮;隔着甜甜的巧克力糖浆、冰凉的鲜奶油啜饮滚烫的热咖啡,更是别有风味! 这种维也纳咖啡有着独特的喝法。不加搅拌,开始是凉奶油,感觉很舒服,然后喝到热咖啡,最后感觉出砂糖的甜味,有着三种不同的口感。 维也纳咖啡的制作有点像美式摩卡咖啡。首先在湿热的咖啡杯底部撒上薄薄一层砂糖或细冰糖,接着向杯中倒入滚烫而且偏浓的黑咖啡,最后在咖啡表面装饰两勺冷的新鲜奶油,一杯经典的维也纳咖啡就做好了。

俄式咖啡
俄式咖啡也叫热的摩加佳巴,具有浓厚的咖啡味。 配制方法:将深煎炒的咖啡、溶化的巧克力、可可、蛋黄和少量牛奶在火上加热,充分搅拌,加入1小匙砂糖,搅拌均匀后,倒入杯中,加1大匙奶油浮在上面,削上一些巧克力末作装饰。

土耳其咖啡(Turk Kahvesi)
土耳其人有句谚语说:“喝你一杯土耳其咖啡,记你友谊四十年。”在土耳其的大街小巷,到处是挂有“咖啡”招牌的店,有的还画着一只小巧的咖啡杯,杯沿上似乎冒着缕缕热气。 土耳其人在喝完咖啡以后,总是要看看咖啡杯底残留咖啡粉的痕迹,从它的模样了解当天运气。 土耳其咖啡既不是蒸馏式的也不是冲泡式的,而是用很细的土耳其咖啡粉,加冷水,用长杓小锅以小火慢煮至沸腾,煮出一杯杯又苦又浓的泡沫咖啡。聪明的土耳其人知道这么浓的咖啡对健康有碍,所以所用的瓷咖啡杯盘体积都非常迷你,约是普通咖啡杯的一半容量。 配制方法:在奶盆里倒入研细的深煎炒咖啡和肉桂等香料,搅拌均匀,然后倒入锅里,加些水煮沸3次,从火上拿下。待粉末沉淀后,将清澈的液体倒入杯中,这时慢慢加入橙汁和蜂蜜即成。

冰冻奶油块咖啡
冰冻奶油块咖啡,是不加冰块的,而是冰镇过的。这里介绍用咖啡制成冰加入的美式饮用方法。 配制方法:在玻璃杯中加入咖啡制成的冰块,倒入加糖煮沸的牛奶,从上面慢慢注入冰冻咖啡,这时牛奶和咖啡分成两层。牛奶泡沫在最上层,撒一些肉桂粉作装饰。

哥伦比亚咖啡(Colombia)
产地为哥伦比亚,烘焙后的咖啡豆会释放出甘甜的香味,具有酸中带甘、苦味中平的良质特性,因为浓度合宜的缘故,常被应用于高级的混合咖啡中。
哥伦比亚咖啡有着一种清苦的体会,清与涩如同生活,而苦味却是人生之中的必需,停在舌根的末香则是一番对前尘彻底的回想。苦是痛苦,清让人沉静,末香便成了一种精神的胜利。 哥伦比亚咖啡是少数以自己名字在世界上出售的单品咖啡之一。在质量方面,还没有别的咖啡得到咖啡客们如此高度的评价。它另有一个很好听的名字,叫“翡翠咖啡”。 世界咖啡分两大系列,一种是以巴西为代表的“硬”咖啡,味道浓烈;另一种是以哥伦比亚为代表的“软”咖啡,其味淡香。区别在于产地的海拔高度和种植方法,巴西将咖啡种在丘陵红壤比较粗放,哥伦比亚产在山地黑土精耕细作。 哥伦比亚咖啡经常被描述为具有丝一般柔滑的口感,在所有的咖啡中,它的均衡度最好,口感绵软、柔滑,可以随时饮用,它获得了其他咖啡无法企及的赞誉:被誉为“绿色的金子”。

巴西咖啡(SANTOS)
巴西乃世界第一的咖啡生产国,所产之咖啡,香味温和、微酸、微苦,为中性咖啡之代表。酸味和苦味可藉由烘培来调配,中度烘培香味柔和,味道适中,深度烘培则有强烈苦味,是调配温和咖啡不可或缺的品种。 從盛產咖啡豆的巴西精選的極品,口感中帶有較濃的酸味,配合咖啡的甘苦味,入口極為滑順,而且又帶有淡淡的青草芳香,在清香略帶苦味,甘滑順口,餘味能令人舒活暢快。 深焙的浓咖啡60cc;砂糖20g。杯中放入砂糖,注入咖啡。这是典型的巴西咖啡。小杯中放入足够的砂糖,不要搅动直接饮用,这样在喝到最后的时候,可以尽享咖啡最后的香甜。

那不勒斯风味咖啡
那不勒斯风味咖啡是很苦很热的早晨咖啡,美国的年轻人更喜欢叫它黎明咖啡。配制方法:在有把儿杯中注入很的深煎炒咖啡,然后在表面放上一片柠檬,摸黑喝下。
混合咖啡 将等量的咖啡和牛奶混合在一起,成为维也纳风味的牛奶咖啡。 配制方法:先在杯中加入稍深煎炒的咖啡,将等量的牛奶倒入奶锅,用小火煮沸,起泡 前加入奶油,不要等泡沫消失就倒在咖啡上

曼巴咖啡(Mandheling Brazil)
巴西的咖啡豆+印尼的曼特宁豆 以50%/50%的比例搭配而成。 醇度苦味和香气绝佳的曼特宁配上口感甘醇的巴西咖啡豆,以中深度烘焙,芳香怡口,强劲有味,是咖啡中之绝配。对于不喜酸味又怕苦味太重的咖啡朋友来说,此款咖啡无疑是最适合的选择!

勃艮第咖啡(Burgundy)
法国的勃艮第是红葡萄酒的故乡,那里出产的红酒颜色鲜艳、口感绝佳。勃艮第咖啡就是在咖啡中混合了葡萄酒的风味,是一款非常高雅的花式咖啡。 法国人对红酒的钟爱犹胜与俄罗斯人对伏特加,巴西人对咖啡。他们不愿意红酒搀杂任何别的物质。Burgundy Coffee却是一种将红酒与咖啡融合在一起的花式咖啡。我在想这种咖啡应该是爱浪漫的法国人设计的,因为它的制作过程中充满了红色的烂漫。先将鲜奶油与红酒搅拌一下,然后打沫,打出来后你会发现红色的奶沫是那么别有韵味,含蓄却又充满了挑逗。在已暖完杯后的马克杯底先加入一点红酒,然后将做好的咖啡与砂糖到入(咖啡是意式浓缩咖啡),最后将打好的红色泡沫放入。一杯浪漫的Burgundy咖啡就做成了。

地中海咖啡
地中海咖啡混合了咖啡、巧克力糖浆和各种香料的味道。混合在一起的香料,就像地中海的多元文化特色,有北部非洲游牧民族的狂野、有西亚阿拉伯人悠久的历史、有南部欧洲人阳光灿烂的性格。因此,如果你想在一个特别的日子营造一种特别的气氛,地中海咖啡是你完美的选择。 地中海咖啡所需要的香料比较复杂,如果你喜欢混合香料的味道就要想办法配齐它们;如果你只喜爱其中的一种或两种,也可以省略其他的香料。 首先把茴香籽、丁香花苞、肉桂粉和小豆蔻放进平底锅炒香,这时你的厨房里会弥漫出一种迷幻的味道,你会情不自禁地赞叹这些源自亚洲的植物对人类神经神奇的刺激作用;然后把巧克力糖浆放入锅里和香料充分混合,这又会升起一股甜香味;最后倒人一杯黑咖啡,一起加热一会儿,温度不要太高,大约90℃,咖啡就要沸腾的时候,把锅从火上移开,趁热倒入马克杯中。

肯亚咖啡(KenyaAA)
是非洲高地栽培的代表性咖啡。AA代表其级数也就是最高级品,其咖啡豆肉质厚呈圆形,味浓质佳,通常采用浅焙。清晨起来喝一杯肯亚,具有醒脑的效用。 肯亚北临阿拉比卡咖啡樹的原產地衣索匹亞,但迟至二十世紀初交,才开始从事咖啡栽培業,十九世紀傳教士从也门引進阿拉比卡樹,但未大量栽種,直到一八九三年,又引進巴西古老的「波旁」咖啡種籽,才大规模栽培咖啡,也就是说,目前的肯亞咖啡帶有巴西血統,由於水士、气候和处理方式迥异,肯亞豆風味和巴西豆截然不同。

夏威夷咖啡(Kona)
夏威夷产的科纳(Kona)咖啡豆具有最完美的外表它的果实异常饱满,而且光泽鲜亮。咖啡的口味浓郁芳香,并带有肉桂香料的味道,酸度也较均衡适度 属于夏威夷西部火山所栽培的咖啡,也是美国唯一生产的咖啡品种,口感较强,香味浓,带强酸,风味特殊。品质相当稳定,是前往夏威夷的观光客必购土产之一。 真正的科纳咖啡确实是世间珍品,不易找到。最佳的科纳咖啡分为三等:特好(ExtraFancy)、好(Fancy)和一号(NumberOne)。这三等咖啡在庄园和自然条件下都有出产。现在市面上大多数自称为“科纳”的咖啡只含有不到5%的真正夏威夷科纳咖啡。在美国还可找到另外一种不错的夏威夷咖啡——夏威夷卡伊农场咖啡(KaiFarms)。
爱尔兰咖啡(Irish coffee) 爱尔兰咖啡是一种既像酒又像咖啡的咖啡,原料是爱尔兰威士忌加咖啡豆,特殊的咖啡杯,特殊的煮法,认真而执着,古老而简朴。 把風味獨到的特製 Espresso 佐以威士忌、糖和鮮奶油,讓Espresso的香濃被威士忌提昇得更為明顯,並與鮮奶油調和出香滑順口、甘苦適中的滋味。

碳烧咖啡(Charcalfire)
是一种重度烘焙的咖啡,味道焦、苦不带酸,咖啡豆有出油的现象,极适合用于蒸气加压咖啡。炭烧咖啡被人们尊称为世界上最苦的咖啡。要知道,酸苦可是人类长时间以来对味觉的“注意信号和基本记忆。而对于咖啡客们现在津津乐道的那股独特的咖啡香来说,其“四味一香的成分分布中,本来就是以酸、苦为基本要素的。在这种意义上,炭烧咖啡这一细致入微的“苦可是一不小心的得了半壁江山的。 日本人就是这样BT。。。。

庞德咖啡
庞德咖啡,又称‘玫瑰咖啡’,是法国最流行的花式咖啡之一。以别致的创意,美的造型著称,特别适合情人对饮或者一个人享受寂寞之美。在咖啡中间悬浮的是几瓣鲜艳的玫瑰花瓣,宛如雪里红,美丽动人,也可以在杯中放入一朵鲜奶油玫瑰花。但是记住颜色一定要鲜艳,这样才会产生强烈的对比之美。此款咖啡味道香醇、浓烈,极适合于餐后和平时饮用 调制方法 倒入2/1杯蜂蜜再加入热咖啡1杯8分满,最后加入鲜奶。杯中先加入糖包,再倒入热咖啡 8分满,上面旋 转加入一层鲜奶油,最后放入2片玫瑰花瓣。

康宝蓝·马琪雅朵咖啡
意大利咖啡真是“百花齐放”,又开出康宝蓝与马琪雅朵两朵花来。 康宝蓝的名字直译出来就是“加了鲜奶油的咖啡”,在一般意大利咖啡专卖店里,康宝蓝咖啡都是用玻璃材质的咖啡杯盛装的,所以可以清楚地看见鲜奶油和咖啡交融的界面。因为鲜奶油本身有淡淡的甜味,所以一般建议在喝的时候不再加糖。 只要在意大利浓缩咖啡中加入适量的鲜奶油,即轻松地完成一杯康宝蓝。嫩白的鲜奶油轻轻漂浮在深沉的咖啡上,宛若一朵出淤泥而不染的白莲花,令人不忍一口喝下。在意大利浓缩咖啡中,不加鲜奶油、牛奶,只加上两大勺绵密细软的奶泡就是一杯马琪雅朵。不象康宝蓝,要想享受马琪雅朵的美味,就要一口喝下。

皇家咖啡(Royal)
法国一向以咖啡馆出名,自然也有几种代表性的咖啡了。首先是高贵的皇家咖啡。这一道极品可是由一位能征惯战的皇帝发明的,对了,他就是法兰西帝国的皇帝拿破仑!他可不喜欢奶味,他喜欢的是法国的骄傲——白兰地!他在咖啡中掺入烈酒,这款咖啡最大的特点是在饮用时需要用火将白兰地和方糖点燃,当蓝色火焰舞起白兰地的芳醇与方糖的焦香,再合上浓浓的咖啡香,苦涩中略带着丝丝的甘甜,将法兰西的高傲,法国的浪漫完美地呈现出来。 诀窍:用皇家咖啡钩匙横放杯口,上放方糖,以白兰地淋湿方糖后点火烧尽后搅拌即可饮用。

怎么样, 很有意思吧. 星八克就是用这样的咖啡文化来吸引一个有一个的回头顾客的. 比如,他的SIZE就不用LARGE, SMALL.他选择意大利语的词. 星八克讲究喝咖啡要要喝的PROFESSIONAL.

另外的一个特色就是,每个顾客都可以点他/她自己的咖啡.想要都个性就有多个性.通过上面的名字,你可以点世界上只有你会喝的咖啡. 这个叫customization. 这也是个趋势.星八克的每个barista都可以向你保证,只要你说的出来,我门就能做的出来.如果你去其他的咖啡点,你能点你要想的温度吗?星八克可以做任何温度的咖啡.只要你说到,我们就会给你做出来.


有一次,一个顾客点了一杯:

我几次焦糖没撒漂亮,那位小姐说:"well, it's not what i expect... but it's ok i'll take it." 我说:"oh i am sorry miss, i will definitely make it again" 我把刚做好的那杯倒掉. 再做了一边. 她尝了还是觉得不够好.于是我又做了2边. 最后,她终于开心的接受我做的第5杯.

当然,这是个极端的例子,因为我们的点一直都有很多人.但是这个例子正说明了星八克的文化:我们做世界上最好的咖啡.因为这件事,我没被批评,还被店长表扬了.

我接受训练的那些日子,每天要喝几十杯咖啡.自己做了喝,再和老师做的.对比后,倒掉,重新做.虽然是浪费.但是就是这样的训练才让每位BARISTA都优秀.
